New menu items at Bambara Courtesy Photo When Hotel Monaco opened in 1999, its in-house restaurant Bambara felt both upscale and trendy—and kind of new for Salt Lake City at the time. Over the past two decades, it’s been through multiple iterations, with its most stable era falling between 2008 to 2021 under Chef Nathan Powers.
Since then, it’s remodeled its dining room, had several menu refreshes and employed a number of chefs, including Patrick LeBeau, Jerry Pacheco and, most recently, JV Hernandez. Most leaned into sourcing from local farmers and ranchers; all boasted exquisite resumes.
