Even though our state’s weird-ass weather wrecked the timing of my patio roundup last week, I’m hoping this week’s weather forecast will back me up when I say it’s a good time to start thinking about ceviche. While I don’t typically enjoy entrees that fall into the categories of cold and savory, there are few pleasures in life that compare with eating ceviche in the summer.
Despite Utah’s desert climate and distance from the ocean, we’re lucky to have a few good cevicherias in town, and Puerto Vallarta Mexican Grill & Cantina is definitely one of them.
